A fantastic vegetarian alternative to wings, these bites are tangy, spicy, and perfectly crispy without the guilt.

Ingredients

  • ½ cup all-purpose flour (or gluten-free 1:1 flour)
  • ½ cup water (or milk for a richer batter)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt

For coating:

  • ½ cup buffalo sauce (like Frank’s Red Hot)

For serving:

  • Ranch or blue cheese dressing, celery sticks after the initial cook prevents the bites from getting soggy.

Instructions

  • Make Batter: In a large bowl, whisk together the flour, water, garlic powder, paprika, and salt until a smooth batter forms.
  • Coat Cauliflower: Add the cauliflower florets to the batter and toss until each piece is evenly coated.
  • Air Fry: Place the coated florets in a single layer in the air fryer basket (work in batches to avoid crowding). Lightly spray with cooking spray.
  • Cook: Air fry at 375°F (190°C) for 15-18 minutes, flipping halfway through, until golden brown and crispy
  • Coat in Sauce: Transfer the crispy cauliflower to a bowl, pour the buffalo sauce over them, and toss gently to coat.
  • Optional Second Crisp: Return the sauced cauliflower to the air fryer for 2-3 minutes at 375°F to set the sauce.

Notes

Don't Crowd the Basket: This is crucial for getting crispy results instead of steamed cauliflower.

Spray for Crispiness: A light spritz of oil before cooking helps achieve a golden, crunchy exterior.
