Ingredients

  • 12 oz spaghetti or tonnarelli
  • 2 cans high-quality tuna in olive oil
  • 1 cup grated Pecorino Romano
  • 2 tsp black pepper, coarsely ground
  • Salt to taste
  • ½ cup reserved pasta water
  • 1 lemon, zested
  • 2 tbsp fresh parsley, chopped
  • Extra virgin olive oil for drizzling

Instructions

  • Cook pasta in well-salted water until al dente. Reserve 1 cup pasta water before draining.
  • Drain tuna, reserving 2 tablespoons of the oil from the cans.
  • Heat reserved tuna oil in a large skillet over medium heat. Add black pepper and toast for 1 minute until fragrant.
  • Add drained tuna to the skillet, breaking it up with a fork. Cook for 2-3 minutes until heated through.
  • Add cooked pasta to the skillet along with ½ cup reserved pasta water. Toss to combine.
  • Remove from heat and add grated Pecorino, tossing vigorously until a creamy sauce forms. Add more pasta water as needed.
  • Season with salt to taste. Garnish with lemon zest, parsley, and a drizzle of olive oil.

Notes

Use high-quality Italian tuna in olive oil for best results
The pan must be off the heat when adding cheese to prevent clumping
Freshly grate your cheese for best melting and flavor
