These wings are incredibly crispy without needing to be deep-fried. The garlic parmesan coating is savory, cheesy, and irresistible.

Ingredients

  • 2 lbs chicken wings, split into drumettes and flats, patted dry
  • 1 tbsp baking powder (NOT baking soda – this is the secret to crisp skin)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

For Sauce:

  • 3 tbsp melted butter,
  • 3 cloves minced garlic,
  • ½ cup grated Parmesan cheese,
  • 2 tbsp chopped fresh parsley

Instructions

    • Dry Wings: Thoroughly pat the wings dry with paper towels. This is the first step to crispy skin.
    • Season: In a large bowl, toss the dry wings with baking powder, salt, pepper, and garlic powder until evenly coated.
    • Air Fry: Arrange wings in a single layer in the air fryer basket.
    • Cook: Air fry at 400°F (200°C) for 24-28 minutes, flipping halfway through, until the skin is golden brown and very crispy.
    • Make Sauce: While wings cook, whisk together melted butter, minced garlic, and parsley.
    • Coat: Transfer crispy wings to a large bowl. Pour the garlic butter sauce and Parmesan cheese over them. Toss to coat thoroughly.

Notes

  • The Baking Powder Trick: A small amount of baking powder draws moisture to the surface, resulting in ultra-crispy skin.
  • Pat Dry: Never skip drying the wings. The less moisture, the crispier the result.
  • Crowding: Cook in batches for the best airflow and crispiest outcome.
